What's stopping engineers from creating a car that goes up to 1000 km/h? Is it physics, technology or simply a lack of demand? We were driving along a motorway at 130 km/hour, and we would like to go faster - the road is empty, why not? But the car can't.

The fastest car in the world (https://mintedra.com/cars-and-transport/the-fastest-car-in-the-world-top-5-cars/) has a top speed about half of what you claim. Firstly, there is no such technology yet, 500 km/hour is already prohibitive for a car. Secondly, let's say the car will go at your speed. What about the driver's reaction time? In driving school they teach you how to calculate your reaction time, even in the tickets there are questions. I don't think anyone would have time to react.
